With 2003 and up outlook you cannot open multiple profiles at the same time although it would have been so helpful.

However instead of using the OFFICE11 use OFFICE12 and don't use the remainder /profile "<profile>" in the command. It will prompt you for the xtra profile that needs to be opened.
